The Brisket is the king when it comes to low and slow beef cuts. The long cooking time allows for the for the connective tissue to break down. The unique thing about this cut of beef is that it can be slow cooked so it’s fork tender, yet is still sliceable. Just remember, if your fork can't break it up it needs more cooking time.
