Before being hit with late onset lactose intolerance I much enjoyed Danish blue cheese, especially in buffalo wing sauce. I've yet to find a plant-based cheese that makes me go back far more. The scent is almost as if it is a Danish blue, and the speckles of 'mold' is actually spirulina to give that quintessential blue mold cheese vibe. The texture is firmer and can be cut in rough slices, however it crumbles quite easily so sprinkling on top of a Waldorf salad or mixing it with some sour cream will make a terrific blue cheese sauce for dipping. Best thing about it is that it doesn't smell as strong as a regular blue cheese so if you're sensitive to this particular smell it's not overpowering at all.
